The Sanitation of Dessert and Beverage Shops and Cafeterias Environment in High School in Sakon Nakhon Province(การสุขาภิบาลร้านอาหารหวานและเครื่องดื่ม และสิ่งแวดล้อมของโรงอาหาร โรงเรียนมัธยมศึกษาตอนปลาย ในจังหวัดสกลนคร)

Abstract

การจัดบริการอาหารในโรงเรียนถือเป็นหน้าที่หนึ่งที่สำคัญของโรงเรียน หากโรงอาหารของโรงเรียนไม่ได้คุณภาพตามมาตรฐานก็จะส่งผลเสียต่อสุขภาพอนามัยของนักเรียนได้โดยตรง ในการวิจัยครั้งนี้วัตถุประสงค์เพื่อนประเมินการสุขาภิบาลอาหารของร้านอาหารหวานและเครื่องดื่มรวมทั้งสิ่งแวดล้อมขงโรงอาหาร ในโรงเรียนมธยมศึกษาตอนปลาย ในจังหวัดสกลนคร กลุ่มตัวอย่างได้แก่ร้านอาหารหวานและเครื่องดื่ม จำนวน 23 ร้าน จาก 11 โรงเรียน ซึ่งใช้วิธีการสุ่มตัวอย่างแบบชั้นภูมิชนิดที่เป็นสัดส่วน โดยเก็บข้อมูลโดยวิธีการสังเกตและสัมภาษณ์ ผลการศึกษานั้นพบว่าร้านอาหารหวานและเครื่องดื่มส่วนใหญ่ (ร้อยละ 82) ไม่ผ่านเกณฑ์มาตรฐานเช่นกัน โดยในภาพรวมการสุขาภิบาลอาหารพบว่ามีโรงอาหารที่ผ่านเกณฑ์มาตรฐานสุขาภิบาลอาหารเป็นส่วนน้อย (ร้อยละ 18) เท่านั้น แสดงให้เห้นว่า โรงอาหารของโรงเรียนมัธยมศึกษาตอนปลายในจังหวัดสกลนครยังมีสภาพการสุขาภิบาลอาหารไม่ดีพอ ดังนั้นผู้ที่มส่วนเกี่ยวข้องทั้งหลายควรจะตระหนักและร่วมกันพัฒนาการสุขาภิบาลอาหารในโรงเรียนให้ถูกต้องตามหลักการสุขาภิบาลอาหารเพื่อความปลอดภัยต่อสุขภาพของผู้บริโภค 

Food provision is one of the most important duties of school. If the school cafeteria does not meet the standard, this will have direct health effects to the student. The objective of the study is to assess the sanitation of dessert and beverage shops and cafeterias environment. The data was sampling from 11 schools by proportional stratified sampling method. The questionnaire from food sanitation division, Ministry of Public Health has been modified. Data was collected by field observation and interview. It was revealed that 70 percent of dessert and beverage shop could not pass the criteria. Regarding the physical environment 82 percent of dessert and beverage shop could not pass the criteria. In the overall of the sanitation of school cafeteria only 18 percent could pass the criteria. It was concluded that overall management of dessert and beverage shops and cafeterias environment of the high school in Sakon Nakorn province was not good enough. It is recommended that the relevant parties should help to enhance the level of the sanitation in high school cafeteria in Sakon Nakon Province.
