Bilayer Intelligent Gelatin Films Containing Zinc Nano-oxide and Anthocyanin from Butterfly Pea as pH Indicator

Bilayer colorimetric films based on gelatin were prepared for monitoring fish spoilage. The upper layer of film was designed to enhance the stability of colorimetric films by adding zinc oxide nanoparticles (ZnO) at 0-1 % whereas the lower layer of film incorporated with butterfly pea anthocyanins acted as a pH sensor. Based on the results, the addition of 1 % ZnO showed the highest color stability after exposure under visible light for 14 days. Furthermore, an increase of ZnO content up to 1 % improved tensile strength up to 64 %. The obtained bilayer films exhibited visual colour changes in fish spoilage trials.
