Abstract

This research aims to increase productivity in the production process of keropok fish crackers in bangnak communities Tambol Bangnak, Amphoe Mueang Narathiwat, Narathiwat Province. It began with brainstorming from those involved in analyzing the production process of keropok fish crackers. To determine the causes and problems that affect the production process by using Failure Mode and Effect Analysis and Pareto Charts. The reasons and effects of the process of crackers resulting in a delay in the production process were cutting crackers into sticks because before cutting crackers into sticks. Crackers are preserved at refrigerated or frozen temperatures, making the cutting process difficult. The researchers presented the manufacturer with a solution by creating machines used to cut crackers and conducting experiments using Analysis of variance methods, analyzing the temperature of crackers while slicing them to analyze the amounts of standardized crackers. Results from the experiment showed that the optimum cracker temperature in machine production was 18 degrees Celsius. Machines can produce an average of 180 kilograms of crackers per hour, while people's labor will be able to produce an average of 18.63 kilograms per hour, increasing the production output of crackers in this can increase the productivity to 9.6 times of using human labors.
