การอบแห้งกระชายดำด้วยเทคนิคผสมผสาน

บทคัดย่อ

กระชายดำมีสรรพคุณทางยารักษาโรคและยังเป็นพืชสมุนไพรเชิงเศรษฐกิจที่สามารถต่อยอดเป็นผลิตภัณฑ์ได้หลากหลายรูปแบบ ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อศึกษาจลนพลศาสตร์การอบแห้งกระชายดำโดยใช้ 3 เทคนิค คือ การอบแห้งด้วยลมร้อน การอบแห้งด้วยอินฟราเรด และการอบแห้งด้วยลมร้อนผสมผสานอินฟราเรด การทดลองดำเนินการภายใต้อุณหภูมิอบแห้ง 45 oC และความเร็วลม 2.0 m/s โดยทำการอบแห้งกระชายดำจากความชื้นเริ่มต้น 136.0 %d.b. จนเหลือความชื้นสุดท้าย 8.0 %d.b. สำหรับพารามิเตอร์ที่ใช้เป็นเกณฑ์ในการศึกษาสมรรถนะการอบแห้ง ได้แก่ คุณภาพด้านสี ปริมาณน้ำอิสระ ความสิ้นเปลืองพลังงานจำเพาะ และแบบจำลองทางคณิตศาสตร์เพื่อทำนายจลนพลศาสตร์การอบแห้ง ผลจากการศึกษาพบว่า ความชื้นกระชายดำลดลงอย่างรวดเร็วเมื่อใช้พลังงานอินฟราเรดกระตุ้น โดยพบว่าการอบแห้งด้วยอินฟราเรด การอบแห้งด้วยลมร้อนผสมผสานกับอินฟราเรด และการอบแห้งด้วยลมร้อนใช้เวลาในการอบแห้งเท่ากับ 515 557 และ 935 นาที ตามลำดับ ในส่วนของคุณภาพด้านสีพบว่า การอบแห้งด้วยอินฟราเรดมีค่าการเปลี่ยนแปลงของสีน้อยกว่าการอบแห้งด้วยลมร้อนผสมผสานกับอินฟราเรดและการอบแห้งด้วยลมร้อนเท่ากับ 2.67 และ 21.46 เปอร์เซ็นต์ ตามลำดับ นอกจากนั้นยังพบว่า การอบแห้งด้วยลมร้อนผสมผสานกับอินฟราเรดมีความสิ้นเปลืองพลังงานจำเพาะน้อยที่สุด สำหรับปริมาณน้ำอิสระพบว่า การอบแห้งทุกเทคนิคอยู่ในเกณฑ์มาตรฐานของอาหารแห้ง และสุดท้ายยังพบว่า แบบจำลองทางคณิตศาสตร์ที่สามารถทำนายจลนพลศาสตร์การอบแห้งกระชายดำด้วยลมร้อน, อินฟราเรด และลมร้อนผสมผสานอินฟราเรดได้ดีที่สุดคือ Weibull distribution, Two-term และ Weibull distribution ตามลำดับ
