Development of Gummy Jelly from Cowa Leaf (Garcinia cowa Roxb. Ex Choisy) Extract

Abstract

The research aims to develop gummy Jelly product from cowa leaf extract. Studying the appropriate gelatin volume (6, 8 and 10 g) and the concentration of suitable cowa leaf extract (5%, 10% and 15% w/v). The results showed that gummy Jelly product from cowa leaf extract 100 g. have ingredients: Gelatin 8 g, warm water 18 ml, glucose syrup 32.5 ml, sugar 33 g, citric acid 2 g and cowa leaf extract 15% w/v 6.5 ml. The product has water activity, pH, color, total solution and texture properties with quality of product met the requirement of Thai community product standard; Public Health of Thailand (issue 213, 2003). The product has nutrition and provide 310.10 kcal of energy. The cowa leaf extract in the product has the antioxidant effect DPPH 47.23+0.20 mg Trolox equivalent /100 g Therefore, the addition of cowa leaf extract increases the value of the product because it has the antioxidant effect that is beneficial for health. It also promotes the use of traditional herbs. In addition, gummy jelly products from cowa leaf extract also provide high commodity value and are accepted by consumers. Therefore, it can be used to develop products for commercial sale in the future.
