Abstract

The purpose of this research is to study the optimum conditions for reduction of free fatty acids content in coconut oil to less than 1% w/w by using esterification reaction with methanol in the presence of Amberlyst 15 as a catalyst. Coconut oil, which is used as a substrate, has an initial free fatty acid content of 3.93 % w/w. In this research, the effects of 4 different types of important variables towards esterification reactions were investigated. These variables included methanol content (5, 10, 20, and 30 % v/v), catalyst content (0, 5, 7.5, and  10 % w/v), reaction temperature (40, 50, and 60 °C), and reaction time (0.5, 1, 1.5, and 2 hours). The results of the study show that under the optimum conditions, the free fatty acid content in coconut oil was reduced to 0.90% w/w. All four variables had a positive effect on the esterification reaction of free fatty acids in coconut oil, except when methanol content was 20 and 30 % v/v
